Pumpkin Puree

This summer I was pleasantly surprised by finding a pumpkin plant from the previous tenants. I only got one good pumpkin from it, but it was a very good sized pumpkin!!
I had to bring it inside to allow it to ripen completely, only got partially orange in the garden.

I wasn't sure how good the pumpkin would be not getting all the way ripe.

It's been sitting inside my house for a few weeks. I decided to cut into it last week and see how it turned out.

I cut and scooped...

Baked and peeled...



Cut in chunks and pureed...



Measured, bagged, and put in the freezer!

I'm surprised I got 26 cups of pumpkin puree out of that one pumpkin!
I love baking with pumpkin and am excited I succeeded my first time making pumpkin puree and can't wait to make pumpkin pie from fresh pumpkin puree.
